Lemon Love Notes
This lemon bar recipe comes from my grandmother. We never called them lemon bars growing up. They were always referred to as Lemon Love Notes. After you taste them, you will realize why. They taste nothing like the typical lemon bars you can buy in a store or even a bakery, They are a love note in the form of dessert. Enjoy!
Ingredients
Crust
- 1 cup softened butter
- 1/2 cup powdered sugar
- 2 cups flour
Lemon Filling
- 2 cups sugar
- 1/2 tsp baking powder
- 4 eggs
- 1/3 cup lemon juice
- 1/2 rind lemon Grate the rind of half a lemon if you want it to have a stronger lemon flavor
Instructions
- For the crust: Preheat oven to 325 degrees. In a large bowl, cream butter and powdered sugar. Add flour, mixing until combined. Spread in a 9×13-inch pan and bake 15 to 20 minutes, just until very light brown.
- For the lemon filling: While crust is baking, stir together the sugar and baking powder. Whisk in the eggs to combine. Then add lemon juice (and optional rind). Mix well and pour over hot crust when it comes out of the oven. Bake an additional 18 to 22minutes, or until the center is set. Tip: To see if the bars have finished baking, jiggle the pan. The filling should jiggle like firm jello. If it doesn’t, then the bars could be overcooked. If it jiggles too much, the bars will not hold together when you cut them.
- Remove from oven and cool an hour before sprinkling with sifted powdered sugar and cutting into bars.
