Amazing Crepes
We make crepes every Sunday for lunch and they are a family tradition. Fill with berries in season, or nutella, sugar, bananas, mangos, and whipping cream. Easy to make and a crowd pleaser.
Equipment
- Crepe pan or frying pan (I use a frying pan), blender (recommended but you can also use a mixing bowl and hand mixer or wire whisk)
Ingredients
- 1 stick butter
- 1 1/2 cup milk
- 1 cup flour
- 4 eggs
- 1 T sugar
- your choice of filling strawberries, blueberries, bananas, mangos, Nutella, powdered sugar, granular sugar, or jam
Instructions
- Put crepe pan (or frying pan with lower sides) on stove over medium-high heat
- Cut a stick of butter in half and add one half (4 tbsp) to the pan and brown
- While butter is browning in pan, add milk and eggs to a blender and blend briefly. Add cup of flour and 1 T of sugar to blender and blend briefly again
- After butter is browned, take pan off stove and add butter immediately to the blender
- Return pan to stove and blend batter one last time in blender. Scrape down sides of blender jar with a rubber spatula to make sure all of the butter and flour are blended. Blend one last time. There will be bubbles at the top of the batter in the jar. Use the rubber spatula to "pop" the bubbles (it's not necessary to pop all of the bubbles).
- With other half of the stick of butter still in its wrapper, use it to coat the bottom of the crepe pan so the crepes don't stick (do not use cooking spray). You aren't going to use all of the butter--just enough to coat the pan each time before you pour the batter into the pan
- Pour some of the batter into the pan and while holding the pan handle in the opposite hand and rotate the pan in a circular motion until the batter has thinly coated the bottom (watch video for example). Return the pan to the stove and continue cook for a minute
- The edges of the crepe will brown vey slightly when it's done cooking and ready to flip. You can also "peek" at the underneath side with the edge of your spatula and check
- Use your spatula to gently scrape the edges of the pan to help release the crepe slightly. Insert the spatula under the crepe and flip the crepe over and continue to cook for another 30 seconds (approx.)
- When both sides are done cooking, insert spatula under the crepe and transfer crepe from pan to a plate. Continue to repeat the process above applying butter to the pan each time before pouring the batter
- Once crepes are cooked, fill with fruit, sugar, and whipping cream and roll crepe up like a burrito
